Hi all,
Hope you had a great day! My day started with a quick 10k on the treadmill, keeping as fast a pace as possible for the duration, save for the 8 minute warm-up. I’m planning on running the Toronto Half Marathon in May so long as I can keep my hips in good condition. They tend to get unhappy around the 15k mark but we shall see. I’m taking the training slowly, with just one long run/week and increasing my mileage gradually. I’d like to do a few triathalons, hopefully olympic distance in the summer, but I haven’t had my butt in the pool all winter so I better start swimming asap! I enjoy setting specific goals or challenges so that I have something to work towards and all the training helps to keep me sharp. If you’ve never done a race of any kind, I’d encourage you to try one. You don’t need to be a high-level athlete to participate and honestly, they’re really fun! (so long as you’re prepared going in).
On another note, I thought I’d share with you a few things that have become staples in my fridge and pantry. In otherwards, a few foods that I’ve been eating every day for the past few weeks! I do that often. Today, I picked everything up at my local Walmart, if you can believe it. Last visit, I picked up a jar of their private label almond butter and was very pleasantly surprised. Plus, the price was great too!
Today though, I bought 4 bags of broccoli slaw (my new found love!)
A big bag of pre-cut broccoli (awesome for quick stir-frys, roasted or steamed veggies, soups…)
and a bottle of the best hot sauce, siracha, which I use in just about everything! Be careful though, it’s hot!
Anyways, with all those items on hand, I whipped up a delicious lunch and was happy, happy!
Here’s what I ate (in case you’re interested).
Egg white omelet with my broccoli slaw. I just sauteed it in a sprayed pan with minced garlic and a few dashes of siracha. Yum!
Baby spinach, kale and some leftover quinoa salad, dressed with 1 T lemon-flavoured fish oil and balsamic vinegar.
