Grilled Asian Salmon with Mango Straw­berry Salsa

Hope you’re enjoy­ing your sum­mer and this nice, hot weather! Let’s hope it doesn’t rain AGAIN!

Just thought I’d share a yummy recipe with you that I made the other night. It’s dead sim­ple, healthy and of course, delicious!

Grilled Asian Salmon with Mango Salsa

Ingredients:

4 salmon fil­lets, (about 6 oz each)

2 gar­lic cloves, minced

grated zest of 1 lime

2 Tbsp grated fresh ginger

1 Tbsp chile gar­lic sauce

1 stalk lemon­grass, finely chopped

2 Tbsp soy sauce

1 Tbsp olive oil

2 Tbsp mirin (Asian sweet wine) or honey

To make the mari­nade, com­bine all ingre­di­ents in a bowl and whisk well to combine.

Place salmon in reseal­able bags and pour mari­nade over top. Seal and move mari­nade around the fish to coat evenly.

Refrig­er­ate for 12 hours.

Place salmon on hot grill and cook until just done. Do not overcook!

Serve with mango salsa and steamed jas­mine rice.

Mango Straw­berry Salsa

Ingredients:

1 mango, peeled and diced

12 cup fresh sliced strawberries

2 green onions, chopped

zest of 1 lime

a few dashes of sir­acha or any hot sauce

2 Tbsp fresh chopped cilantro

salt, to taste
