Hope you’re enjoying your summer and this nice, hot weather! Let’s hope it doesn’t rain AGAIN!
Just thought I’d share a yummy recipe with you that I made the other night. It’s dead simple, healthy and of course, delicious!

Grilled Asian Salmon with Mango Salsa
Ingredients:
4 salmon fillets, (about 6 oz each)
2 garlic cloves, minced
grated zest of 1 lime
2 Tbsp grated fresh ginger
1 Tbsp chile garlic sauce
1 stalk lemongrass, finely chopped
2 Tbsp soy sauce
1 Tbsp olive oil
2 Tbsp mirin (Asian sweet wine) or honey
To make the marinade, combine all ingredients in a bowl and whisk well to combine.
Place salmon in resealable bags and pour marinade over top. Seal and move marinade around the fish to coat evenly.
Refrigerate for 1 – 2 hours.
Place salmon on hot grill and cook until just done. Do not overcook!
Serve with mango salsa and steamed jasmine rice.
Mango Strawberry Salsa
Ingredients:
1 mango, peeled and diced
1⁄2 cup fresh sliced strawberries
2 green onions, chopped
zest of 1 lime
a few dashes of siracha or any hot sauce
2 Tbsp fresh chopped cilantro
salt, to taste
