Hope you’re all enjoying this wonderful weather! I love the summer, especially when it includes loads of casual outdoor bbq’s. Who doesn’t enjoy kicking back and digging into something wonderfully delicious, hot off the grill? My favourite is probably a perfectly cooked salmon filet although I do love chicken cooked a million different ways too! And who can resist grilled veggies??? I throw just about every kind of vegetable on the grill and use the leftovers in my salads throughout the week. Some of my faves include, vidalia onions, eggplant, zucchini and peppers. All they need is a generous splash of a good quality balsamic vinegar before serving, and they’re ready to go. So yummy.
The other night, I made a really tasty coleslaw that I thought you might like to try. It’s simple, healthy and really good. The perfect addition to any outdoor meal. Enjoy!

I wish I could say that I was able to get out and run and bike but unfortunately, I’m still nursing this pesky injury and thought it best to take the entire second week off just to be on the safe side. My chiro, who I pray to daily, suggested that I let it heal before I go back to my usual training schedule. So, that being said, I was resigned to the hot, stinky gym and the lovely stepmill. I actually enjoy that machine and find it nice and challenging but on a beautiful sunny morning, who really wants be working out indoors?

Happy belated Mother’s Day! Hope all you moms enjoyed lots of pampering and love all day long. I spent a relaxing day at home with my kids which was a real treat, since they’re both teenagers and are always running somewhere or making plans to go out. Yesterday though, I had them all to myself which was really nice. The hockey game was the icing on the cake; my son was overjoyed as I’m sure most 14 year old boys were, last night.

Sorry it’s taken me awhile to blog but I guess you could say I’ve still been in vacation mode since returning from sunny California.
What a wonderful holiday! If you’ve never been to Sonoma and Napa and enjoyed the incredible food and wine out there, then you absolutely must. We also enjoyed some great cycling out there, specifically in the Russian River Valley area, where there are some lovely rolling hills and magnificent landscapes. It took me a few days to get back to East Coast time (I hate jet lag!) but was it ever worth it. Can’t wait to return!

How’s everyone enjoying this crazy weather? Do you think maybe one of these days it will feel like spring? I don’t know about you but I’ve had just about enough. So glad that come Saturday, my hubby and I will be on a plane bound for sunny California. We’re heading out to one of our favourite cities in the world — San Francisco, as well as the glorious wine country of Napa and Sonoma. We’re going to be doing some cycling there while sampling delicious wines and farm-fresh foods. I’m also planning on going for some nice long runs there which I’m certain will be heavenly. Not sure I’ll want to come back, especially if the weather doesn’t get any better!
